Food for thought...

We've been bad with the meal planning recently and I'm blaming it mostly on people being under the weather at our house...which means either the plan didn't get done OR the plan got done but the shopping didn't OR the plan got done, the shopping got done, but when the time came to cook, the cook wasn't up to cooking.

Hopefully we're back on track and I've decided to link up to the Org Junkie's Menu Plan Monday.


We have a bit of a strange week because I need to keep the kitchen free on Thursday afternoon and I'm not sure what state it will be in at dinner time. So instead of plugging the slow cooker in, I decided that we're eating from the freezer.

Monday: Tortellini - I have to be out of the house by 6:00 tonight (a challenge when we get home close to 5:30) and I need to feed my kid and the babysitter. Usually I make something that has lots of leftovers on Sunday, but that didn't happen last night as we were at a hockey game.

Tuesday: Pancakes! It's pancake Tuesday!

Wednesday: Baked salmon with potatoes and vegetables

Thursday: Beef barley soup with corn meal muffins

Friday: Curried Lentils, Rice and Mushrooms

Saturday: Dinner at Alex's parents'

Sunday: Creamy Chicken Spaghetti Casserole

Now all I need to do is get the groceries (that's why we have a lunch break, right?)

    Monday: Bean & cheese & veggie tacos
    Tuesday: Grilled tilapia, baked potato and salad
    Wednesday: Mung bean coconut curry and brown basmati rice
    Thursday: take Mom out for sushi
    Friday: Indian feast: green bean chicken & tomato curry, cauliflower steaks, paneer & spinach dish, brown basmati rice
    Saturday: leftovers

  5. we love pancakes for dinner...we actually have had pancakes for dinner more often than I'd like to admit over the past few weeks...they're an easy dinner when we have sick people at our house!

    PS Why doesn't it surprise me that you also had pancakes tonight ;)
